Orange-flavoured dough ringsI N G R E D I E N T S 250 ml orange juice250 ml olive oil 320 g sugar 1 tbsp ammonium bicarbonate 1 level tsp baking soda 1 level tsp baking powder 80 ml brandy 1 lemon, the juice The grated peel from 1 lemon and 1 orange All-purpose flour (as much as necessary) Sesame seeds for sprinkling over the rings
P R E P A R A T I O N Dissolve well the baking soda in the brandy and pour it into a basin, together with the oil,the orange juice, the sugar and the lemon juice. Beat the ingredients for quite some time until thoroughly mixed. Add the ammonium bicarbonate and the baking powder and start incorporating into the mixture the flour, kneading and adding as much flour as necessary to make a soft and pliabledough that does not stick to the fingers. Roll it into a ball. Preheat the oven to 180°-200°C. Pull small pieces of the dough-about the size of a walnut-off the ball, and roll them with the palm of your hand into longish sticks the thickness of your little finger. Bend each stick to form a ring, overlap the ends and make them stick together by pressing them down with your finger or with the rounded end of an old-fashioned key. Place the rings on oiled baking trays. Before putting them into the oven, sprinkle them with the sesame seeds and bake them for 1 5 to 20 minutes.
